Idly browsing Goodreads reviews for the Fork, Witch, Work book, I came across one reviewer who has managed to sum up almost the entirety of Paolini's popularity, both at the time and the current nostalgia people who grew up reading his books feel.
"Christopher Paolini is incredible at making the reader work harder than him to imagine a better fantasy than he can. Young people with eager minds fill in the lazy gaps of his narrative and make their own version of the world something truly special, and I think that's why I've always loved and been inspired to write by his truly terrible writing. "
I think that pretty much nails it.
